Looking for a new anime to watch...
Just finished watching Death Note and I loved it...but now I need something new to watch! What are you watching/have watched that is good? Nothing too kiddy-ish, but if sounds good I'm open to it.

The story takes place in AmberGround, a land of perpetual night only partly illuminated by an artificial sun. Lag Seeing is a newly-minted delivery boy, called a "Letter Bee", who worked at the Bee Hive delivery service), with his Dingo, Niche, and her "pet", Steak, travelling with him. As a Letter Bee, Lag's job is to deliver letters and packages from town to town while avoiding AmberGround's deadliest hazard—Gaichuu, giant armoured insects who attempt to feed off the "heart" that reside within these letters and packages.
When Lag was very young, his mother was kidnapped by men from AmberGround's capital of Akatsuki. He was sent as a "delivery" to his aunt thanks to Gauche Suede, who Lag started to idolize and was inspired to become a Letter Bee. But as Lag becomes a Letter Bee, he is informed that Gauche has disappeared; at the same time, a resistance movement called "Reverse" begins stealing letters from travelling Bees.
Lag later encounters Gauche, who appears to have no memory of his past, and is now devoted to Reverse's cause. In desperation, Lag vainly tries to make Gauche remember. At the same time, Gauche awakenes a giant flying Gaichuu that is headed for the town Yuusari, the location of the Bee Hive; and later Akatsuki to destroy AmberGround's man-made sun.
Its a coming of age/fantasy/mecha anime, with a solid and engaging plot if a little slow at times.

Cowboy Bebop and Samurai Champloo, these are definitely my two favorite animes although they are each only one season long.

Planetes - it's about a fantastic crew of characters. They clean up orbital junk in the near future. It's much better than the elevator pitch. 
Last Exile - two kids who work as high-risk couriers to fund their airship racing habit get caught up in - and find the secret core of - the conflict breaking out in the world around them. High recommendations.

RMDC have you seen Silver Wing, I started but it just didn't grab me like the first one.
If we are going for the oldies as well
Neon Genesis Evangelion, or the new Rebuild of. I could try and explain it, but I would need to understand it to do that....
Ghost in the Shell : Stand Alone Complex .Less meta than the movies and more of a police squad crack down, but interesting and engaging plot.
Revolutionary Girl Utena ( side note : The right stuff have just announced they've got the rights to The Rose Of Versailles
) The girl who wants to be a prince, and wins a princess to save the world via Fencing, oh and Bishies
Gunslinger Girl - 6 year old girls become a cyborg gun squad for a special counter terrorist unit in Italy
Azumanga Dioh - cute fluff that is as funny as it is strange
Hellsing - MI7 headed by Sir Integra Hellsing, have a Vampire attack dog, the Vatacian don't approve, and there are fake vampires and zombies on the loose. And a poor innocent Police Woman gets caught up in it all. More of a study of what it means to be human with dash of supernataural fights than slasher flick.
Nior - Angles of Death in a French assassination thriller with a killer sound track.
Full Metal Panic 1/2 + Fumoffu : A high school romance comedy where the male is a war vet who has been holding guns and fighting since he was about 3. With dashes of mecha here and there. But the best reason to watch FMP is so you understand FMP Fumoffu - which is a total and complete * take, of everything and had me falling of my perch every 5 minutes with laughter.
Gate Keepers - Retro * take of Super Heroesc manga from the 60s and 70s

I have issues with Evangelion - it's good until the pseudo-religious-prophesy-drug-trip-thingy happens.
Plus Shinji is a rather poor protagonist. He doesn't actually do anything, just reacts to stuff and goes crazy.

And you mention Fruits Basket, which is a good thing, because it cannot be recommended enough.
I also second the Ghost in the Shell series and Revolutionary Girl Utena (especially the movie).
