If you would rather go for a larger count on your fabric, may I suggest 18ct and 3 strands? I've done work on a very dark blue background (it was either 16 or 18ct) and I used 3 strands, I tried 2 and the background did sorta poke through with some colours. So, I would suggest using at least 3 strands. Efrite's right though - a swatch to test with would be best, as it will be you who does the work and you who has to be happy with how it goes :)

On 22ct fabric I've used 3 strands and it's almost too much. It does get really good coverage though. I would definitely use at least 3 strands on 14 or 18 count. Maybe even more on 14ct if I wanted complete coverage.

You could vary the number of threads or use half-stitches for the dark parts that are inside the image - you'd get a more interesting profile that way. One of the best things about cross stitch is that it's 3D and not enough pattern-makers make use of varied stitches and numbers of threads, in my opinion.
Fish, fish, my only wish!
