OK, so I've started watching a few animes that were recommended on here. I bought the 'Cardcaptor Sakura' DVD's (volume one, anyway, since that's all that's available here until Nov 28!) which I did watch as a kid, but it was the English dub. Watching it in it's original Japanese was awesome, loved it. It was unrecognisable to the dub and it makes so much more sense now! I picked up 'Cowboy Bebop' rather cheaply last week and I finished it earlier today and O. M. G it was EPIC! I am now devastated that there's only one season of it! I'm waiting on the 'Haruhi Suzumiya' and 'Ouran High School Host Club' DVD's to arrive at my house, both of which I picked up pretty cheap. Next week when I get paid I plan on getting 'Code Geass' and 'Elfen Lied', and maybe 'Black Butler'. Thanks to all for all the recommendations, please keep them coming if you think of any more!

I did think of another one. Darker Than Black was one that my husband and I thoroughly enjoyed.

Darker than Black is one I quite enjoyed. I started watching Planetes but only had the first few episodes readily available. Ghost in the Shell is a classic 
if you feel like a movie Appleseed is good. As is anything Ghibli of course.
Some others I like:
Trinity Blood - Vampires vs the church(ish) set about 1000 yrs after an apocalyptic war.
Kaze no Stigma - action/comedy/drama/supernatural with people controlling various elements. Is a lot better than how I describe
Mai Hime - supernatural drama set at a high school with giant monsters battling it out. One of my all time favourites.
Tears to Tiara - plot and most characters are a bit cliché, but a nice take on the welsh/Arthurian/pseudochristian mythos.
Gundam Seed and Destiny - First anime I watched so I have a soft spot
